Uchenna Chukwu, B.S., Ph.D. is a Registered Patent Agent admitted to practice before the USPTO (2002) with over 10 years experience as an intellectual property (IP) professional in the agricultural, biochemical, biotechnical, chemical, food, medical device, and nanotechnology arts. She received her B.S. in Biology from Tulane University and a Ph.D. in Food Science from the University of Illinois at Urbana-Champaign, IL. Her research experience includes Food and Biochemical Engineering, Bioprocess Engineering, Membrane Separations, Value-Added Processing, Fermentations, Food Product and Process Development, Functional Food and Nutraceutical Product and Process Development.

More recently as Founder, CEO and President of biotechnology and nutraceutical research firm, Dr. Chukwu pioneered the discovery of using food-grade enzymes as a cooking aid to produce "gas-free beans" and reduce the cost, time and fuel energy required for cooking tough vegetables such as beans, greens, and the like. She also has extensive corporate and entrepreneurial experience that includes designing, formulating, plant and consumer-testing food products, such as snacks, soups, main meals, desserts, baked goods and beverages.

Dr. Chukwu has extensive expertise in discovering and developing bioprocessing systems that concentrate, recover and purify value-added products like acetic acid (vinegar) and calcium magnesium acetate ("the nicer snow de-icer") from agricultural and biological systems. She has been honored by the U.S. Department of Agriculture, Institute of Food Technologists (IFT), The Honor Society of Agriculture, Gamma Sigma Delta, Illinois Chapter, Phi Kappa Phi, the National Science Foundation, and INROADS/NC Triangle, Inc. She is also a professional member of IFT, and the National INROADS Alumni Association.
